The Ultimate Diwali Bhel by Mira Manek

The Ultimate Diwali Bhel by Mira Manek

I wanted to share the recipe for the showstopper bhel salad… so simple, oozing with flavour and chutneys, and just delicious! I’ll be making this again for our family Diwali party on the weekend, alongside my mother’s outstanding pau bhaji, a table filled with snacks including the famous chakri and lots more… watch my instastories for updates.

The original recipe for this bhel is on page 75 of my first book Saffron Soul but I’ve just added various elements to it, and you can do it with or without a lot of the ingredients below! As always, swapping and editing is great for those creative juices.

QUINOA, KALE & SWEET POTATO BHEL WITH WATERMELON

  • 1 cup quinoa, boil in roughly double the quantity of water
  • 3 medium sweet potatoes, chopped in small cubes, boiled until a little soft (around 10-15 minutes)
  • handful kale leaves, finely chopped (or use spinach)
  • 1-2 red onions, finely chopped
  • 1 tin of chickpeas, drained
  • few tablespoons roasted red pepper chutney
  • few tablespoons coriander cashew chutney
  • few tablespoon imli (date and tamarind) chutney
  • juice of 1 lemon
  • seeds of 1 pomegranate
  • 1 bowl of mamra, puffed rice and/ or sev*
  • ¼ watermelon, chopped or 2 apples, chopped in cubes

*if you don’t have this, use wholesome crushed nachos e.g. I quite like the Riceworks brand. Mamra, sev or nachos is to add the ever-important crunch to the bhel!

CHUTNEYS:

RED PEPPER CHUTNEY

  • 2 red peppers, roughly chop, then roast in oven or sauté in pan
  • Blend the red peppers with
  • handful cashews (preferably soaked)
  • 1 clove garlic
  • 1 teaspoon salt
  • 1 teaspoon cumin seeds
  • ½ glass of water (just enough to blend)

CORIANDER CASHEW CHUTNEY

  • small bunch coriander leaves (with stalks)
  • ½ bowl cashews (preferably soaked for 1 hour or overnight)
  • 1 teaspoon salt
  • juice of 1 lemon or lime
  • 1 tablespoon honey or brown sugar
  • few tablespoons or ½ glass water, just enough to blend

Imli chutney: this can be quite the process to make at home – the recipe for this is on page148 of Saffron Soul, but it’s quite easy to find this chutney in supermarkets or online. If it is very thick, then just water down as you should be able to drizzle this chutney.

When ready to serve and eat, mix together all the bhel ingredients with a few tablespoons of each of the chutneys, add salt to taste, add a little more chutney if needed, and serve with garnishings of coriander leaves or crunchy sev.

Lots of layering, lots of colour and lots of texture!

This Diwali—Lights and the Power of One

Most cosmogonies, or creation stories, have similar elements. The idea of dark and light—feminine and masculine—originating together is one such example of a common theme. Hindu cosmogony is no exception. Before the time of creation when all was dark, Shakti, (feminine energy of the universe) and Shiva (masculine) were connected as a single source. The illusion of duality, the belief that opposites exist, was born when they separated. The story goes that because of their separation, we live in suffering, searching to become whole and united again. We maintain the belief that what we want and what we need is external of ourselves. We do not understand that we, and everyone around us, are already whole.

The fusion of Shiva and Shakti’s masculine and feminine energy is said to be the source of everything in the universe. The etymology of the word universe illustrates this: uni (one) + verse (poetic line). Our thoughts, our intentions, and our actions arise from a single poetic line. In numerology, the number one is an indication to focus on your thoughts and remember the intentions you are putting into the world. The number one serves as a reminder that your thoughts influence your actions and what you think you manifest.

Each person consists of masculine and feminine energy: We are Shakti and we are Shiva. Yet we forget this and tear ourselves apart, telling ourselves that we are not good enough, strong enough, successful enough, tall enough, pretty enough, or rich enough. Due to our inability to recognize our individual greatness as part of a continuous energy connecting us with all beings, we manifest the very fears and doubts we try to hide away.

We are born into this world with a dharma, our path and life purpose. To connect with our dharma draws us to the inner joy and bliss that arrives when one no longer searches the external world for happiness. To be on your dharmic path is to live from that cosmic source, and as you serve yourself, you serve others.

This November is an energetic time of potent manifesting and arriving on our path. On November 7, in various regions of India, Diwali begins as a celebration of light over dark, good over evil. Diwali starts on the new moon, and like the time before creation, everything is dark. The new moon represents the vast potential of a new cycle. During this time when the sky is dark, there is a natural tendency to go inward and self-reflect.

In the darkness, however, we can hide our embarrassments, traumas, self-doubts, and feelings of shame. Yet from a non-dualistic viewpoint, our dark and light sides are two sides of the same coin. Just as we are made up of masculine and feminine energies we are also the qualities of light and dark. So do we let our egos and fears trigger shame, regret, and guilt—or do we move from the heart with compassion, acceptance, strength, and selfless power?

According to Joanne Sacred Scribes, the number 11 is a karmic number that symbolizes spiritual enlightenment, and when we pay attention to the number 11—the number of the month November—it will connect with our higher self and lead us to our life purpose, our dharma.

When we honor our own divine purpose, we find the light that leads the way. Each of us are on a path that leads to our best selves. On this path we fall in love, lose love, fall down, discover shortcuts, get lost, feel abandoned, and discover joy. We search outside of ourselves, ignoring the signs that we are light and dark, masculine and feminine, yin and yang. This is the path to discovering that you are perfect and whole. Never forget: You are one with the uni-verse, individual, but not alone.

Shorter Days, Longer Nights: How to Embrace Scorpio Season

Full moons, disappearing sunlight, and a zodiac rollercoaster: regardless of where you are, fall is full of feelings. Scorpio season is upon us and there’s no escape. Scorpios are known to be one of the most emotional and intense signs of the zodiac—and this season is no exception. Everyone is affected in slightly different ways, but for the most part, prepare yourself for some intensity.

But don’t feel overwhelmed. Emotions are beautifully things, and as Dr. Habib Sadeghi states, “Just because you numb your emotions doesn’t make you emotionally sophisticated.” Allow this season to be an opportunity for you to embrace your emotions and nourish your precious little heart. Here are seven ways to work with your emotions this season—rather than against them.

Invest in yourself.

One way to prepare for an emotional roller coaster is to give yourself another area of focus. This way you won’t be taking a sick day just so you can stay indoors and binge Gilmore Girls alongside a pint of gluten-free cookie dough. Consider signing up for a class, trying a new workout routine, finding a therapist, or experimenting with a side hustle. If you’re swamped for time, a simple investment might be a good planner or managing your finances—the new organization will help provide an area of focus when your heart starts to throb.

Tack 10 minutes of meditation onto your morning routine.

Do you really need another sign telling you to meditate? Yes, because the truth is, many of us aren’t meditating. Whether it’s because we’re short on time or can’t sit still for more than 2 minutes, excuses not to meditate flow like water. But starting this habit is extremely beneficial, especially during a time of emotional vulnerability. Meditation teacher and Ziva Meditation Founder Emily Fletcher says, “We don’t meditate when sh** hits the fan—we meditate to prepare ourselves for when sh** does hit the fan.”

By developing a meditation practice, you create space and awareness in the mind so that you can notice your emotions, rather than fall victim to their power.

Consciously communicate.

Whether it’s with your coworker, your friends, or your significant other, it’s easy to allow our emotions to get the best of us. Avoid having tough discussions late at night or when booze is involved—this will only muddy your conversations and confuse intentions. If you need to have a hard or potentially intense conversation with someone, give yourself some time beforehand to think about what you want to convey and the best method for doing so. And listen, listen, listen! You aren’t the only one with heightened emotions, but you might be the one in the conversation who is more equipped to handle them.

Reap your harvest.

Harvest goes beyond collecting a bushel full of Honeycrisp apples—it can be metaphorical too. Dallas Hartwig and Pilar Girasimo of the Living Experiment Podcast state that one of the best ways to feel motivated is to remind yourself of past successes. When your emotions are in full swing, give yourself a little credit for all of the hard work you’ve done and enjoy the rewards of that hard work. It will not only allow you to have more self-love during a potentially difficult time, but might provide a hefty dose of motivation for you to put effort into a project.

Dive into your sex life.

Scorpios are the most sexual of all the signs, so don’t be surprised if you find yourself feeling a little more, um, charged this month. But be careful: You’ll also be craving emotional connection, so it may not be the best time to dive onto Tinder—unless you’re prepared for what you’re getting yourself into. Have fun with your partner or all on your own. It’s primetime to practice sexual self-care.

Make art.

What do Adele, Bon Iver, Hozier, and Alanis Morisette have in common? They both used their heartache to fuel some of the world’s best breakup albums. And while we’re not suggesting you drop and duck out in the woods for a month of agonized song-writing, it might behoove you to channel your emotions into something creative. Go for your preferred method of creating or try something new. Collaging, journaling, writing poetry, or even sequencing emotionally-nourishing yoga flows are all stellar options.

Make new connections.

As we mentioned earlier, you’re likely not the only one with a soft heart this month. Use it as an opportunity to connect with others, both personally and professionally. Everyone might be feeling a little raw, which can be a great opportunity for honest communication. This could lend to authentic networking, making new ride-or-die friends, or going deeper with a sibling. Remember the power of authenticity and sincerity. We’re all just lookin’ for some love, ya know?

Explore your introvert.

The best connection you can maintain is to yourself and your spirit. While it might feel intimidating at first, alone time can feel especially delicious during Scorpio season. It’s an excellent time to go deeper and reflect on your dreams and desires. It’s also a great time to binge read, organize your closet, or crank some heart-filled poetry in your room.
